
I discovered this recipe when my husband's grandfather came to town to visit us, who is on a very strict no-sugar diet. Later that year I tried a keto lifestyle and cut out sugar completely... this recipe was very helpful-- Although not totally Keto! I've whipped these together ever since and add chocolate for an additional sweetness. Its incredibly easy and can be made within 20 min.
Ingredients
3 very ripe bananas
⅓ cup raw honey
¼ cup coconut oil
1 large egg
1 tsp vanilla
1 ½ cups flour (I use stone milled wheat, but most flours work just fine)
1 tsp baking soda
¼ tsp salt
OPTIONAL: 1/2 cup Chocolate chips, oats and/or walnuts to top
Instructions
1 Preheat the oven to 375F.
2 In a large bowl, mash the bananas with the honey, oil, egg and vanilla. Add the flour, soda and salt. Add chocolate chips if you desire.
3 Divide the batter among 10-12 paper-lined muffin cups, filling them almost full, (top with oats and walnuts if you wish) and bake for 20 minutes, or until golden and springy to the touch.
I've also tried mixing in blueberries and other fruits and it comes out amazing! Feel free to experiment.
